One of my absolute favorites! Not too sweet, fills up good and makes you stay full for a while. Best of all, it’s simple and fast.
Mix all the ingredients, start with the dry:
3,5 dl flour, 1 tablespoon sugar, 1 teaspoon baking powder. 1 egg, 3 dl milk and 1 tablespoon oil.
Leave it for a few minutes before you start baking the pancakes.
You should be able to fit 2-3 pancakes in your frying pan, using 2-3 tablespoons of the mix per pancake.
Remember to use medium heat and fry the pancake a little on each side until it has a nice light brown color.
I love serving it with Philadelphia and blueberries, but any other berries and cheese will fit.
